Coffee Production

We work closely with smallholder coffee farmers utilize simple farm tools and sustainable farming practices to ensure high-quality coffee production amidst rural outback challenges. The process begins with carefull selection of coffee cherries, hand-picked at peak ripeness to ensure optimal flavor. Using basic tools, farmers then depulp the cherries, fermenting the beans in natural spring water to enhance their taste profile. Drying is conducted on raised beds, allowing even drying and reducing the risk of mold.

To combat soil depletion and maintain long-term farm health, farmers employ organic composting and crop rotation techniques. Farmers also engage in shade-grown coffee practices, which protect the coffee plants and preserve the surrounding ecosystem. Regular training on sustainable farming methods and quality control is provided to farmers, fostering a community of knowledgeable and environmentally conscious producers.

Despite the challenges of limited infrastructure and remote locations, these farmers remain dedicated to producing premium coffee. Their commitment is further supported by Koezo Lakhihutt Cooperative Society efforts that facilitate access to markets, ensuring that the coffee from Central Kimi reaches global consumers while maintaining its exceptional quality and sustainability.
