Coffee Processing
We work closely and ensure cooperative members use a sustainable coffee processing technique that produces best quality for the market. The processing of coffee beans is managed to ensure the highest quality and flavor. The process begins with the careful picking of ripe cherries, which are immediately pulped on the same day to preserve their inherent qualities. Following pulping, the beans undergo a 24-hour fermentation period, a critical step that enhances the beans' flavor profile.
After fermentation, the beans are thoroughly washed to remove any remaining mucilage. The washed beans are then spread out to sun dry for two to three days. This drying process is crucial, as it reduces the moisture content to an optimal level, preparing the beans for storage. At this stage, the coffee is referred to as "parchment."
The parchment coffee is then bagged and stored, ready for transportation. The journey to the market in Goroka, approximately 150 kilometers away, begins once the beans are sufficiently dried and packed.
